Does Hilton accept cryptocurrency or Apple Pay?

Short answer: Hilton does not take cryptocurrency directly, and it never has. What it does take is a normal card, and Apple Pay works both in the Hilton Honors app and at the front desk of most properties. So the practical route is a card you fund with crypto, then Apple Pay on top of it.

Why your card gets declined on Hilton
